We’ve found the tastiest porridge bread ideal for coeliacs and those with gluten intolerances. This bread made from porridge oats is so delicious and a great alternative to bread for those of us who are trying to beat the bulge and cut down on wheat.
Great for breakfasts and school or work lunches. You can even omit the egg for a tasty vegan version. Unlike other bread it won’t leave you with a nasty bloat and we guarantee you’ll never look back. It’s healthy, tasty, and so simple to make.
The recipe is a creation of health expert, Yvonne Duffy O’ Shaughnessy.
What you’ll need; 1 large tub of dairy free yoghurt – Yvonne uses 500ml of coconut yoghurt. 2 tubs of gluten free porridge oats – if using jumbo oats, Yvonne makes sure to mill them in a food processor or coffee grinder first. 2 tsp of gluten free baking soda. 1⁄2 tsp salt. 1 tablespoon of dairy free milk. 1 egg – just leave this out for a vegan friendly option. 1 Tablespoon of oat bran for a little extra fibre. Seeds – Yvonne uses a mix of sunflower and pumpkin, add a handful to the mixture and some for the top of the bread too.
Then you’re ready to get started! Remember to preheat your oven for about 10 to 15 minutes. Next, place the baking soda, salt and yoghurt into a mixing bowl. Using the same yoghurt tub, measure out 2 tubs of porridge oats and add to the bowl. Stir the mix thoroughly. Add the beaten egg and milk and stir to combine.
Place the mix in a greased standard loaf tin, about 900g – 18.5 x 11.5 x 9cm Sprinkle with oat bran. Add any seeds you’re using. Bake at 180° for approx 50 minutes, depending on your oven the time might vary.
Remove the bread from the tin and cook for another 10 minutes. Leave to cool on a wire tray and enjoy!
